Ride east through IJburg to Muiderslot, one of the Netherlands' best-preserved medieval castles. It's close enough for a spontaneous day out but feels miles from the city. Take the dike road home even if it adds twenty minutes — it always does. Buy entrance tickets in advance on the Muiderslot website.
